Structure:
Crocetin, also known as crocus acid or crocus sativus, is a colorless crystal and one of the main active components of saffron. It is derived from the fruit of gardenia gardenia in the rubiaceae family and belongs to carotenoid substance with polyunsaturated conjugated enoic acid structure. Crocetin is a natural apocarotenoid dicarboxylic acid that is found in the crocus flower and Gardenia jasminoides. It forms brick red crystals with a melting point of 285°C.
